How to make spaghetti
The following three vegetarian spaghetti recipes with arugula, chili and Gorgonzola are easy to prepare and are guaranteed to work right away. They are a real treat even for non-vegetarians.

Vegetarian spaghetti
Three great vegetarian spaghetti recipes. 

Spaghetti with vegetables and lime sauce
Serves three to four people:

400g spaghetti
50g Parmesan
450 g frozen peas
2 limes
1/4 liter of vegetable broth
A few mint leaves
1/2 cup creme fraiche (low fat)
Salt, freshly ground pepper colorful

Preparation:
Cook the spaghetti in plenty of salted water. While the spaghetti cook, the sauce is prepared. First, the vegetable is boiled and peas cooked in about ten minutes over medium heat. Wash the mint, finely chop and add the crème fraîche with the vegetables. Squeeze one lime and add the juice, season with salt and pepper. Wash the other lime in hot water and cut with shell in very delicate slices.

The rub Parmesan and stir into the vegetable sauce, let the sauce simmer for about five minutes yet. Mix the drained spaghetti with the sauce and serve garnished with slices of lime.

Spaghetti with rocket and chilli
Serves three to four people:

400g spaghetti
Salt
100 g arugula
1 shallot
2 cloves garlic
1 red chilli
75 g parmesan straight
6 tablespoons olive oil
2 tablespoons pickled capers
Colorful freshly ground pepper

Preparation:
Cook the spaghetti in plenty of boiling salted water until al dente. While the spaghetti cook, the sauce is prepared. First, the Parmesan rub and set aside. Wash the arugula, remove coarse stems and pluck the leaves into pieces. The shallot and garlic, peel and chop. Halve the chili lengthwise, remove the seeds, wash and cut into thin strips. Now the oil in a large saucepan, sauté the shallot, garlic and chilli in it over medium heat.

The Spaghetti drain, taking care to collect a small cup of the cooking water. Put the spaghetti with arugula, capers and the cup of boiling water into the pot of chili oil and mix well. Season with salt and pepper and serve immediately.

Spaghetti with Gorgonzola sauce
Serves three to four people

400g spaghetti
Salt
250 g cream
150 g Gorgonzola
1 teaspoon white balsamic
Colorful freshly ground pepper

Preparation:
While the spaghetti cook in plenty of salted water, the sauce is prepared. For this purpose cut the Gorgonzola into small pieces and leave some few pieces for garnish. The heating and melting the cream cheese in it over low heat and let simmer slowly. Season the gorgonzola sauce with balsamic vinegar, salt and pepper and frothy with a hand blender. The Spaghetti Drain, drain and mix with the cheese sauce. Sprinkle the remaining cheese pieces and serve it.
